There's also the question of what is already public knowledge. I think it's because when you've gone to the expense of having a trip to support the curriculum, a teacher wants time to follow up on it in class before the freshness has worn off in the children's minds. Most schools will timetable a trip fairly early on in a topic, to trigger off interest - if that's not possible, they still don't really want it more…

As an early years teacher I'm completely in agreement with the idea of delaying formal education till the age of 6. The analogy I use is that of trying to potty train a new-born baby - if you start from birth, they will be dry at about 2 years old.
